
I made these for St Paddy's day. They were a big hit! I decided to use black cupcake papers to go with the Guinness theme and I was very happy when the icing came out the colour of the head on a Guinness because of the Baileys Cream.
The Guinness gave it such an interesting flavour, there was a definite hint of the Guinness, a rich barley kind of flavour. Really different, really good! I overfilled mine a bit so the tops cracked, but they still tasted great and were very moist.

I used Jamesons Whiskey but found it needed more than the recipe called for, I also ran out of the filling and was short by about 6 cupcakes, it could be that my apple corer was a bit larger and I could have made deeper holes. This happened to fall on the same weekend that I made the Devil's Food Cake with Ganache Frosting so I went with the same method I used for the cake and did half milk choc, half dark choc and no butter but the equal amount of cream. I think the next time I make these (and I will be making them again!) I'm going to go for 200ml cream, 200g chocolate & 4 tsp whiskey. (Note... I see she has updated her recipe to make more ganache :) )
The icing was absolutely delicous! When my husband and I had a taste we wanted to just eat it out of the bowl with a spoon! An idea I'm going to try next time is to use the Mint Baileys Cream and give it a slight green hue, it is the colour of Ireland after all! If you're going to make big swirls like I did you need to increase the recipe by at least half the amount.
