Ice-cream! (And a giveaway)

Trust me to post a review on an ice-cream book in one of the coldest weeks we've had in Ireland this summer. Typical. But I'm sure there are plenty enjoying the full heat of summer, and in fact, it's now officially Spring in the Southern hemisphere, so happy Spring Day!

I now finally have a copy of David Lebovitz's The Perfect Scoop, I've been meaning to get this book for a while, it just has such a good reputation all round for its recipes that I knew I'd need to add it to my bookshelf.

Mmmmm.... Vanilla.....

This is my favourite vanilla cupcake recipe and it's always a pleaser, at home, round the office, with friends. It's a moist and dense sponge with just the right amount of sweetness and all that buttery goodness. 

Simply topped with velvety vanilla Swiss buttercream and with decadent white chocolate ganache hiding inside, these cupcakes are always loved.

I Scream, You Scream...

We all scream for ice-cream!

This month's Daring Baker challenge was fantastic! I didn't quite get it right, purely my fault, lack of planning and loads of procrastination, but it tasted fantastic anyway. I mean, come on. Home-made ice-cream, home baked Swiss Roll, combined to make a cake. Yum!
